Beef & Vegetable Soup

Serves:  6

Preparation time: 10 mins

Nutrition:

  • Calories: 195

  • Fat    3.6g

  • Carbohydrate    18.5g

  • Protein    22.1g

Ingredients:

  • 450 g (1 lb) lean steak, cubed

  •  2 cups fresh or tinned tomatoes

  • 2 cups cabbage

  • 4 carrots

  • 2 cups diced potatoes

  • 2 cups green beans

  • 1 small onion, cut into chunks

  • Tomato juice

Directions:

  1. Cut the steak into cubes

  2. Cook the meat until tender in 1-2 tbsps of low fat oil

  3. Combine all vegetables with cooked meat, season with 1 tsp salt

  4. Simmer for 1 hour - keep checking and add the tomato juice in small amounts if more liquid is required

  5. Enjoy!
