Cajun Chicken

Serves: 2

Preparation time: 25 mins

Ingredients:

  • 4 oz whole wheat pasta

  • 2 portions chicken breast

  • 2 tbsp cajun seasoning

  • 1/2 cup skimmed milk

  • 1 bag baby spinach leaves

  • 8 oz fresh mushrooms, chopped

  • 1 tbsp butter buds

  • 1 tomato, chopped

Directions:

  1. Cook pasta according to instructions on packet

  2. Lightly coat a large pan with one cal spray and place over medium heat. Coat chicken with cajun seasoning

  3. Place chicken breasts in pan, cook for 6 minutes, turn and cook for another 6 minutes. Make sure it is not pink in the middle. Transfer cooked chicken to grill to keep warm

  4. Add mink, mushrooms, pasta, spinach and butter buds to pan, mix well

  5. Cover and simmer on low heat, stirring occasionally until heated through

  6. Divid pasta into 2 portions and top with a portion of cajun chicken. Garnish with tomatoes

  7. Enjoy!
