Chicken Teryiaki

Serves: 4

Preparation time: 55 mins

Ingredients:

  • 4 chicken breasts

  • 1/4 cup teryiaki marinade

  • 4 small sweet potatoes

  • 1 lb garden peas

  • 1 tsp powdered wasabi

  • 1/4 tsp black pepper

  • 1/4 cup skimmed milk

  • 1/4 cup fat--free sour cream

Directions:

  1. Preheat oven to 180c

  2. Marinade the chicken breasts with teryiaki marinade for at least 30 mins

  3. Peel potatoes and cut into cubes. Place potatoes in large saucepan and cover with water. Bring to boil and simmer until tender

  4. Cook chicken in oven for about 20 mins or until not pink in middle

  5. Place peas in saucepan with about 1 inch of water, bring to boil, cover and simmer until crips to bite

  6. Drain potatoes, mash with wasabi and black pepper, add skimmed milk and sour cream and mash until light and fluffy

  7. Place chicken and mashed potato with 1/4 of snow peas on plate

  8. Enjoy!
