Egg White Enchiladas

Serves: 1

Preparation time: 8 mins

Ingredients:

  • 1 whole egg

  • 3 egg whites

  • 2 tbsp reduced fat cheese, grated

  • 2 corn or wholegrain tortillas

  • 1/4 avocado, sliced

  • 1/4 cup salsa

Directions:

  1. Lightly  coat a pan with one cal spray and place over medium heat

  2. Whisk egg and egg whites until blended, pour into pan and scramble for about 2 mins. Add cheese, sliced avocado and a spoonful of salsa

  3. Microwave 2 tortillas on high for 30 secs

  4. Fill each tortilla with half the scrambled eggs and cheese, sliced avocado and a spoonful of salsa

  5. Roll them up and top with remaining salsa

  6. Enjoy!
