Grilled Salmon

Ingredients:

  • 2 medium sweet potatoes

  • 1 lemon, halved / dicided

  • 2 portions salmon fillet

  • 2 tsp olive oil

  • Spinach leaves

Directions:

  1. Preheat oven to 180c

  2. Place potatoes on a baking sheet and wrap them in foil, bake for about 45 minutes or until tender

  3. PREHEAT GRILL TO MEDIUM

  4. Squeeze lemon over fillets and brush with olive oil. Place salmon on grill and cook until opaque throughout, about 5 mins per side

  5. Lightly coat pan with one cal spray and place over med-high heat. Add mushrooms and saute until wilted, a bout 3 more minutes

  6. Place a portion of salmon on a bed of spinach along with the potatoes, squeeze remaining lemon over salmon & spinach

  7. Enjoy!
