Healthy Cooked Breakfast

Serves: 1

Cooked breakfast is an old favourite and there is no reason you cannot add this healthy version to your diet a couple of times a week. At breakfast time your body is prone to being catabolic and needs an influx of nutrients. This meal is high in protein, fibre and complex carbohydrate and has a medium fat content with some healthy fat sources.

Preparation time: 20mins

Ingredients:

  • 1 whole egg

  • 4 egg whites

  • 2tbsp skimmed milk

  • 1/8 tsp black pepper

  • 2 slices wholegrain bread

  • 25g olive based spread

  • 2 slices lean bacon

  • 1/2 tin of low fat baked beans

  • 2 low fat pork sausages

  • 1 tomato

Directions:

  1. Lightly coat a pan with one cal spray and place over medium heat

  2. Whisk together egg, egg whites, skimmed milk and black pepper. Pour egg mixture into pan and stir until set. Remove from pan and place under grill to keep warm

  3. Grill bacon & sausages as per instructions. Grill the tomato on a low heat for 5 mins

  4. Heat the baked beans in a saucepan or microwave

  5. Grill or place bread in toaster, put olive spread on

  6. Serve & Enjoy!
