Paprika Chicken & Spicy Vegetable Rice

Serves: 2

Preparation time: 40 mins

Ingredients:

Chicken

  • 4 portions skinless boneless chicken breast

  • 3 tsp paprika seasoning

  • 1/2 tsp salt

  • 1 tsp ground pepper

  • 1 tsp ground onion powder

  • 1 tbsp vegetable oil

Rice

  • 4 oz wholegrain rice

  • 1 green pepper

  • 1 onion

  • 1 garlic clove crushed

  • 1 tsp chilli powder

  • 1/2 tin baby sweet corn

  • 1 tsp ground cumin

  • 1 tsp ground cinnamon

  • fresh coriander

  • tin of red kidney beans

Directions:

  1. Pre-heat oven to 200C

  2. Combine chicken ingredients - salt, spices and oil in bowl, coat the chicken in the spice mixture

  3. Place chicken on oiled oven tray for about 20 mins or until cooked

  4. Heat oil in large saucepan and cook onion and garlic until soft. Add pepper and spices and stir until fragrant

  5. Add rice, stir to combine and add the water

  6. Bring to the boil and and simmer

  7. Add the other vegetables and cook for 15 mins

  8. Serve and Enjoy!
