Paprika Chicken & Spicy
Vegetable Rice
Serves: 2
Preparation time: 40 mins
Ingredients:
Chicken
Rice
-
4 oz wholegrain rice
-
1 green pepper
-
1 onion
-
1 garlic clove crushed
-
1 tsp chilli powder
-
1/2 tin baby sweet corn
-
1 tsp ground cumin
-
1 tsp ground cinnamon
-
fresh coriander
-
tin of red kidney beans
Directions:
-
Pre-heat oven to 200C
-
Combine chicken ingredients -
salt, spices and oil in bowl, coat the chicken in the spice mixture
-
Place chicken on oiled oven tray
for about 20 mins or until cooked
-
Heat oil in large saucepan and
cook onion and garlic until soft. Add pepper and spices and stir until fragrant
-
Add rice, stir to combine and add
the water
-
Bring to the boil and and simmer
-
Add the other vegetables and cook
for 15 mins
-
Serve and Enjoy!
