Serves:  6

Preparation time: 10 mins

Nutrition:

  • Calories: 125

  • Fat    0.6g

  • Carbohydrate    18.5g

  • Protein    12.1g

Ingredients:

  •  2 cups tinned tomatoes

  • 2 whole tomatoes, chopped

  • 2 cups cabbage, chopped finely

  • 4 carrots, chopped

  • 2 cups diced potatoes

  • 2 cups green beans

  • 2 parsnips, chopped

  • 1 small onion, cut into chunks

  • Tomato juice

Directions:

  1. Combine all vegetables season with 1 tsp salt

  2. Simmer for 1 hour - keep checking and add the tomato juice in small amounts if more liquid is required

  3. Enjoy!
